What Are Micronutrients — and Why Do They Matter?
Macronutrients — carbohydrates, protein, and fat — get most of the attention in popular nutrition conversations. But micronutrients, the vitamins and minerals your body needs in smaller amounts, are equally essential. They drive virtually every biological process: converting food into energy, building bone, supporting immunity, regulating mood, and repairing cells.
Unlike macronutrients, your body cannot manufacture most micronutrients on its own in sufficient quantities. That means they must come from food — or, in some cases under medical guidance, from supplements. Understanding which nutrients do what, and where to find them, is one of the most practical steps you can take toward a genuinely nourishing diet.

Essential Vitamins: What Each One Does and Where to Find It
Vitamins fall into two categories: fat-soluble (A, D, E, K) and water-soluble (C and all eight B vitamins). Bioavailability
The proportion of a nutrient that the body actually absorbs and uses after consumption. Cooking method, food pairing, and individual gut health can all influence bioavailability.
Daily Value (DV)
A reference number used on U.S. nutrition labels to indicate how much of a nutrient one serving provides relative to a general daily intake recommendation. It is a guide, not a personalized target.
Fat-Soluble Vitamins
- Vitamin A: Supports vision, immune function, and skin cell turnover. Found in liver, eggs, dairy, sweet potatoes, and leafy greens (as beta-carotene, which the body converts).
- Vitamin D: Critical for calcium absorption and bone health; also plays roles in immune regulation. Synthesized by skin in sunlight; dietary sources include fatty fish, egg yolks, and fortified dairy and plant milks.
- Vitamin E: Acts as an antioxidant protecting cell membranes. Found in nuts, seeds, wheat germ, and vegetable oils.
- Vitamin K: Essential for blood clotting and bone metabolism. Leafy greens (spinach, kale, broccoli) are the richest sources.
Water-Soluble Vitamins
- Vitamin C: Antioxidant; supports collagen synthesis and immune defense. Citrus fruits, bell peppers, strawberries, and broccoli are excellent sources.
- B Vitamins (B1, B2, B3, B5, B6, B7, B9, B12): This family drives energy metabolism, nervous system function, and red blood cell production. Sources span whole grains, legumes, meat, dairy, eggs, and leafy greens. Vitamin B12 is found almost exclusively in animal products, making it a key consideration for those eating plant-based diets.

Key Minerals and How to Get Them From Food
Minerals are inorganic elements that your body uses for structure and signaling. They divide into macrominerals (needed in larger amounts) and trace minerals (needed in smaller but still critical amounts).
Macrominerals
- Calcium: Builds and maintains bones and teeth; involved in muscle contraction and nerve signaling. Dairy products, fortified plant milks, canned fish with bones, and calcium-set tofu are reliable sources.

Trace Minerals
- Iron: Carries oxygen in the blood. Heme iron from red meat and poultry is most readily absorbed; non-heme iron from legumes and spinach is enhanced by pairing with vitamin C.
- Zinc: Supports immune function, wound healing, and taste perception. Oysters, red meat, poultry, beans, and pumpkin seeds are good sources.
- Iodine: Required for thyroid hormone production. Found in seafood, dairy, and iodized salt.
- Selenium: Antioxidant role; supports thyroid function. Brazil nuts (even just one or two a day), fish, and eggs provide selenium effectively.
